Cookie Monster Cupcakes

Maddie and I made these Cookie Monster Cupcakes this afternoon (inspired by this). I used flaked coconut for the “fur,” which I dyed with blue gel food coloring in a zipper bag. There’s probably a better method, but that’s all I had on hand. I also dyed the frosting blue. For the eyes, I melted white chocolate chips in the microwave and poured little circles onto waxed paper. We put an upside-down chocolate chip in the center of each one before the white chocolate hardened. I sliced a “mouth” and inserted a small chocolate chip cookie (Chips Ahoy!) into each cupcake. I think they kinda look like frogs, but they’re not too bad for our first attempt. The kids in her class loved them!

Vegetarian Tacos even meat-eaters will love!

Ingredients:
2 cans reduced sodium garbanzo beans
1 packet Taco Seasoning (any brand)*
shredded lettuce
stone-ground corn tortillas, lard-free flour tortillas, or hard taco shells
diced tomatoes
avocado
shredded cheese*
sour cream*
any other items you like on your taco

Directions: Combine garbanzo beans with taco mix. For juicier filling, use all liquid from garbanzo beans. For less juicy filling, use liquid from only one can. Simmer over medium heat for 10-15 minutes, stirring occasionally. Lightly mash the garbanzo beans with a fork or bean masher. This not only keeps them from rolling out of your taco shells, but gives them a ground beef-like texture. Heat the tortillas under a broiler or in a non-stick skillet. Spread some of the bean mixture on the tortilla, then top with the other ingredients. Enjoy!

* To make this a vegan dish, make sure the taco seasoning does not include whey or milk solids, and substitute vegan cheese, such as Vegan Gourmet: www.followyourheart.com/cheese.php and sour cream, such as Tofutti’s Sour Supreme: www.tofutti.com/soursupreme.0.asp

Bacon Guacamole Burger

Made with grass-fed, hormone-free ground up bovine, Niman Ranch Uncured Applewood-Smoked Bacon, and homemade guacamole!

Guacamole
1 shallot, finely chopped
2 cloves garlic, minced
1/4 – 1 jalapeño pepper (seeded), finely chopped
1 Roma (plum) tomato, diced
2 ripe avocados, diced
juice of 1 fresh lime
salt & pepper to taste (if needed)
Mix everything together, and enjoy!

Summit Fire

Smoke from the Summit Fire in the Santa Cruz Mountains made for an interesting sky this morning. The kids loved the muted red sun.

½ cup margarine or butter
1 ½ cups all-purpose flour
1 cup sugar
1 egg
½ teaspoon vanilla
¼ teaspoon baking soda
¼ teaspoon cream of tartar
2 tablespoons sugar
1 teaspoon ground cinnamon

In a mixing bowl beat margarine or butter with an electric mixer on medium to high speed for 30 seconds. Add about half of the flour, the 1 cup sugar, the egg, vanilla, baking soda, and cream of tartar. Beat till thoroughly combined. Beat in remaining flour. Cover and chill 1 hour (does anyone actually do this?? Not me!).

Shape dough into 1-inch balls. Combine the 2 tablespoons sugar and the cinnamon. Roll balls in sugar-cinnamon mixture. Place 2 inches apart on an ungreased cookie sheet. Bake in a 375° oven for 10 to 11 minutes or till edges are golden. Cool cookies on a wire rack. Makes 24 – 36 cookies.

Bahama Billy’s Island Steakhouse

Bahama Billy’s at The Barnyard in Carmel is was one of our favorite restaurants in the Monterey area. Unfortunately, the restaurant has been sold and is no longer as good as it was. RIP Bahama Billy’s. Never fear, though – the incomparable Billy Quon has opened up The Volcano Grill. Located in Carmel Valley Village, it’s a longer drive but well worth it!
