Ingredients:
flour tortilla shell (baked at 450° until crispy)
black beans (slightly mashed)
shredded cheese (I used a blend of Monterey Jack, Cheddar, Queso Quesadilla and Asadero)
diced tomatoes
sliced avocado
2 eggs over medium
sour cream
Bake the black beans and cheese in the tortilla shell until cheese is melted. Top with the fried eggs and the rest of the ingredients. Enjoy!
